Agar-agar is a natural high molecular polysaccharide extracted from high quality natural seaweed such as Gracilaria and Gelidium and refined by scientificmethod. The color of agar-agar ranges from white to slightly yellow, with a gelatinous feeling and odorless or with a slight characteristic odor. Agar-agar is a hydrophilic colloid, which is insoluble in cold water, easily soluble in boiling water and slowly soluble in hot water.
Agar-agar has a unique importance in industry, as it can form a quite stable gel (jelly) even at a concentration as low as 1%, and is a necessary raw material for food industry, chemical industry and medical research.
Agar-agar has an extremely useful and unique property in food industry applications. It has properties such as gelling and stability, and it can also form complexes with some substances. It can be used as thickening agent, coagulant, suspending agent, emulsifier, preservative and stabilizer.
